Fresh Summer Fruit Salad

Sauce:

  • ⅔ cup fresh orange juice
  • ⅓ cup fresh lemon juice
  • ⅓ cup of brown sugar
  • ½ teaspoon grated orange peel
  • ½ teaspoon grated lemon peel
  • 1 teaspoon vanilla essence

Salad:

  • 2 cups diced fresh pineapple
  • 2 cups peeled and sliced strawberries
  • 3 kiwis, peeled and sliced
  • 3 sliced bananas
  • 2 peeled and cut oranges
  • 1 cup seedless grapes
  • 2 cups blueberries

  • In a large mixing bowl, combine all the fruits together.
  • Now, in a separate mixing bowl, whisk together 1/2 cup of orange juice, 2 tablespoons of lemon juice, 2 tablespoons of brown sugar, 1/2 teaspoon of finely grated orange peel, 1/2 teaspoon of finely grated lemon peel, and 1/2 teaspoon of vanilla essence.
  • Continue whisking until the brown sugar has dissolved and the sauce has a smooth consistency.
  • Gently toss the fruit salad so that the different fruits are evenly distributed and put the smooth consistency of sauce in it.
  • If desired, you can chill the fruit salad in the refrigerator for at least 30 minutes before serving.
